Prep Time: 10 mins, Cook Time: 30-40 Mins, Total Time: 40-50 minutes

 Serves 4


  • 4 Chicken thighs, skinless boneless

  • 1/2 tsp Garlic powder

  • 2 Eggs

  • 1/4 cup Almond flour

  • 2 tsp Paprika

  • 1/2 tsp Pepper

  • 1/2 tsp Salt

  • 1/4 cup Butter

  • 1/2 cup Parmesan cheese, shredded or powdered


1. Preheat oven to 180 degrees C

2. Beat 2 eggs in medium size mixing bowl and mix flour, parmesan, paprika, garlic powder, salt and pepper in a second bowl

3. Place a wire rack on a large baking sheet and brush the rack with olive oil

4. Dip chicken, one thigh at a time, in egg mixture, then in parmesan and paprika mixture turning to evenly coat both sides of each thigh with each ingredient

5. Place on prepared baking sheet, in a single layer and pour the melted butter evenly over the chicken

6. Bake for about 30-40 minutes in the pre-heated oven, until the cheese has browned and the chicken is cooked. You can also finish them off under the grill for a minute or two to get extra brown on top

7. Serve with delicious freshly cooked vegetables
