Spicy Chicken Stuffed Peppers

PREP TIME: 10 MIN       COOK TIME: 40 MIN      TOTAL TIME: 50 MIN      SERVES: 8


2 cups shredded cooked chicken

1 cup light cream cheese

1/2 cup grated Noble Cheese

1/2 cup grated Edam Cheese

1 jalapeno, minced (optional)

2 tsp ground cumin

1/4 cup salsa

1 tsp salt

4 peppers any colour (red are the sweetest)


1. Pre-heat oven to 180 degrees Celsius

2. Slice peppers in half length ways and remove seeds and membrane. Place in a baking dish

3. Add chicken, cream cheese, grated cheeses, jalapeño, cumin, sals and salt to a medium mixing bowl and stir well to combine

4. Spoon chicken mixture evenly into each halved pepper

5. Cover tightly with foil and bake for 40 minutes

Serve immediately. (These peppers come out tender crisp. If you want a softer pepper, boil them in water for 2 minutes, before stuffing and baking)
