Granola

PREP TIME: 10 MIN        COOK TIME: 40 MIN       TOTAL TIME: 50 MIN

SERVES: 20 QTR CUP SERVES

INGREDIENTS:

1 cup raw almonds

½ cup peanuts (or walnuts or hazelnuts)

1 cup whole grain oats

1 cup oat bran

1 cup sunflower seeds

½ cup pumpkin seeds

½ cup flax seeds (linseeds)

½ teaspoon salt

2 teaspoons cinnamon

½ cup water

1 tablespoon olive oil

2 tablespoons Splenda 

DIRECTIONS:

Heat oven to 180°C

Cover baking tray with baking paper

Roughly chop the almonds (you can do this in a food processor if preferred)  

In a bowl combine the almonds, peanuts, oats, oat bran, sunflower seeds, pumpkin seeds, flax seeds, salt and cinnamon. Set aside

Mix the water, olive oil and Splenda together, and warm over low heat. Add to nut mixture and mix well (with your hands)

Place the mixture onto the baking sheet. Press into an even layer

Bake for 30-40 minutes. Keep an eye on it and stir the mixture with a large spoon every 10 minutes.  Bake until fragrant and deep golden brown

Remove from oven, cool completely

Store in sealed container

Serve with berry coulis, protein powder and plain, unsweetened yoghurt or trim milk
