Chia seeds expand when soaked which makes for a great pudding-like texture with the added bonus of protein and other beneficial nutrients. Chia pots (or pudding) have become a popular breakfast treat- add your favourite protein, yoghurt, fruit- they're easy to make just how you like them!
Ingredients (one serving)
1/2 cup of light milk or light coconut milk
1/8 cup chia seeds
1 tsp Vanilla essence
1 tsp of cinnamon
Add stevia to taste
Optional: Add one tablespoon of protein powder, especially if you are using coconut milk or wanting to eat on its own
Whisk up all ingredients in a jug or bowl. Pour into individual containers if making a bulk batch, and chill in fridge overnight.
Add yoghurt, mixed berries, a sprinkle of nuts and seeds or your own favourite high protein toppings!
