Immensely enjoyed at our latest workshop, serve hot or cold, on their own or with delicious dips.
450g chicken thigh mince
2 gated zucchini
3 spring onions- chopped
Handful fresh corriander - chopped
Garlic clove- minced
1/2 tsp ground cumin
3/4 tsp of salt
1/4 tsp black pepper
Coconut oil (or ghee) for frying
Mix all ingredients well with hands.
Take a tablespoon amount in hands and shape into mini patties then fry in oil or ghee for a few minutes, turning as you go. We suggest cooking just one first to test timings and seasoning once cooked.
Enjoy on it's own or with avocado dip, salsa, garlic mayo or home-made ketchup.
Zucchini Bites can be frozen and reheated as needed.
